Chinese Steamed Fish (清蒸鱼)

Ingredients

Main

Any Oily, White Meat Fish (Pompfret, ling, snapper, etc)
1 stalk
spring onion
15g
ginger
3 cups
hot water

Sauce

3 tbsp
soy sauce
3 tbsp
water
1/3 tsp
white sugar
1 stem
spring onion
10g
ginger

Infused Oil

15g
ginger
2 tbsp
cooking oil ((Canola oil is ideal ))

Method

  1. 01

    Jullienne the ginger for the infused oil and for steaming fish

    Slice the ginger for the sauce

  3. 03

    Split the spring onion between the white and the green parts

  4. 04

    Lightly smash the white part of the spring onion

  5. 05

    **Cooking the Fish.** Add the hot water to a wok and bring it to a boil

    Add a heatproof plate on top of a steaming rack

  7. 07

    On the plate, place the spring onion, the fish on top and the jullienned ginger on top of the fish

    Steam for 7-8 minutes ( depending on how thick and what type of fish it is)

    Whilst steaming, use the time to make the infused oil and sauce

    Assemble the dish, by placing the steamed fish on a clean plate

    Pour the sauce over the fish and then pour the infused oil over everything and serve

    **Infused Oil.** Starting off with a cold sauce pan, add in the cooking oil

    Bring the oil up in temperature and add in the jullienned ginger

  14. 14

    Fry until brown and crispy

Notes

  • The ginger amount is just a guide, being precise with it isn't a big deal.
