Lean Taco Bowl

Ingredients

The beef (marinade, 30 min)

1000g
lean beef mince
to taste
salt
½ the packet
taco seasoning (no-sugar, just spices)

The cook

2 large
onions
½ the packet
taco seasoning
1–2 cups
beef stock

The bowl

300–450g
cooked rice
plenty
lettuce or cabbage
plenty
salsa
to taste
hot sauce
1 can (optional)
black beans
to serve
Greek yoghurt (replaces sour cream)

Method

  1. 01

    Salt and half the taco seasoning into the beef. Mix well by hand and leave at least 30 min.

    Brown the beef mince.

  3. 03

    Take the mince out; add the onions until softened.

  4. 04

    Add the mince back in.

  5. 05

    Add the remaining taco seasoning and a splash of water (or the beef stock).

  6. 06

    Cook until soft.

  7. 07

    Portion with rice, lettuce/cabbage, salsa, and optionally black beans. Top with Greek yoghurt.

Notes

  • Target ~45–55g protein per serve.
  • If using beans, reduce the rice slightly to keep calories in check.
